Yes,we can switch an existing amazon EBS gp2 volume to gp3 and it's actually a pretty common thingt to do, especially gp3 is cheaper and gives you more flexibility.

Yes, it is possible to modify your volume type from gp2 to gp3 without detaching volumes or restarting instances. To modify the volume go to the AWS console-volume-select the volume to modify – Action - Modify volume. We can modify the volume type, size, IOPS, and Throughput
